Vegan salad 3

Serves: 1  Prep time: 5 mins  Cook time: 0 mins

Ingredients

  • 200g sliced firm tofu
  • 1/2 cup sliced raw mushrooms
  • 1/2 a Lebanese cucumber sliced thinly
  • 1 small can (125g) of edemame
  • 2 cups of four-leaf salad mix
  • 1 tbsp Apple Cider Vinegar
  • 1 tsp extra virgin olive oil
  • Salt to taste
  • Tobasco sauce (optional if you want it to be spicy)
Here is a picture of the four-leaf salad mix I buy. 

Directions

 

  1. Combine all ingredients on a plate.
  2. Mix the vinegar, olive oil and salt together and pour over the salad.
  3. Pour some Tobasco sauce on top of the salad (optional).
