Savoury mock mince and veggies

Serves: 4  Prep time: 20  mins Cook time: 60 mins

Ingredients

  • 300g packet of frozen Quorn
  • 2 tbsp tomato paste
  • Stock powder to taste
  • 1tsp chilli bean sauce (optional - spicy and salty) 
  • 2 tbsp olive oil
  • 1/2 packet of 4.5-star frozen potato chips.
  • 4 individual serving packets of microwavable frozen veggies

Quorn

Chilli bean sauce

Chilli bean sauce can be bought at any Asian grocery store, but beware that it is spicy, so avoid it or use very little if your children don't like spicy foods.

 

Directions

  1. Follow the instructions on the back of the frozen veggie packet to microwave the individual packs.
  2. Heat 1 tbsp of oil in a non-stick frypan and fry the frozen chips on low heat until cooked and then set aside.
  3. While the chips are cooking, heat the remaining oil in another small non-stick frypan.
  4. Add the Quorn to the frypan and fry on low heat until thawed.
  5. Add the stock powder, tomato paste and chilli bean sauce to the Quorn and continue to fry until cooked. Consider adding one or more tablespoons of water or oil to the Quorn mixture if it starts to burn. Remove from heat and set aside.
  6. Divide the finished ingredients into four serves
