Vegan salad 1

Serves: 1  Prep time: 5 mins Cook time: 0 mins

 

Ingredients

  • 1/2 cup of chopped raw mushrooms
  • 1 small can (125g) of sweet corn
  • 1 small can (125g) of edemame
  • 7 mini tomatoes diced in half
  • 1/2 of an avocado
  • 2 tbsp of plain hummus (or with jalapenos - optional)
  • 2 tbsp pickled vegetables

Directions

Combine all ingredients on a plate.
