Typical school lunch for my son

Serves: 1  Prep time: 10 mins Cook time: 0 mins

Ingredients

  • 6-7 olives
  • 1/2 tomato chopped
  • 1/2 Lebanese cucumber chopped
  • 1/4 of a small red onion finely diced
  • 1 cup salad greens
  • 1 1/2 tbsp Apple cider vinegar 1 tbsp olive oil
  • Salt to taste
  • 1 ripe mango
  • 1/3 cup of mix of nuts (can be pecans, Brazil nuts, peanuts, pistachios, walnuts, cashew nuts etc.)
  • 1 tbsp dark chocolate nibs

 

Directions

  1. Combine salad greens, tomatoes, cucumber, onion and olives in a bowl.
  2. Combine vinegar, salt and olive oil and add to salad. Serve in a container.
  3. Chop mango and serve in a separate container.
  4. Pack nuts into a small container.
