Vegan salad 2

Serves: 1  Prep time: 5 mins  Cook time: 0 mins

Ingredients

  • 1 slice of sourdough bread
  • 1 tub of plain hummus or hummus with jelapeno (65g)
  • 1/2 cup sliced raw mushrooms
  • 1/2 a Lebanese cucumber sliced thinly
  • 7 mini tomatoes chopped
  • 1 cup super slaw mix
  • 1/4 a small red onion chopped finely
  • 1 tbsp apple cider vinegar
  • 1 tsp extra virgin olive oil
  • Salt to taste
Here is a picture of the super slaw mix I buy.

 

Directions

 

  1. Combine all vegetable ingredients on a plate.
  2. Mix the vinegar, olive oil and salt together, and drizzle over the salad.
